The designation Irish whiskey or irish whiskey identifies beverages produced on the island of Ireland. Irish whiskey has held a PGI (Protected Geographical Indication) since October 30, 2015. It should also be noted that Irish whiskey has had an official act since December 10, 1980, named the Irish Whiskey Act. Irish whiskey is a spirit made by distilling cereals, most often barley. Irish whiskey has an alcohol content equal to or greater than 40%.

There are 4 types of Irish whiskey:

Irish pure pot still whiskey: a whiskey made from barley and distilled in a pot still. Pure pot still is the modern name for pot still whiskey. It is similar to single malt, but the grain used is a mix of barley and malted barley (minimum 30% each, plus up to 5% of another cereal). The ratio between barley and malted barley may vary. Irish pure pot still whiskey was first produced in the 17th century. It has two well-known varieties: Redbreast 12 and 15 years, and Green Spot. Both are made at Midleton in Ireland.

Single malt whiskey: a whiskey produced in a single distillery, hence the name. Irish single malt whiskey is distilled exclusively from a malted cereal fermented with either barley or rye. In Ireland, only Bushmills and Cooley produce single malt whiskey.

Single grain whiskey: whiskey made in a continuous still. Grain whiskey has a simpler flavor than malt whiskey, which is distilled in a lower-yield pot still. It is, however, a very important component of blends. Single grain emerged in the first half of the 19th century after Aeneas Coffey invented the continuous still. Originally, the grain used was unmalted barley, but it was gradually replaced by a blend of cereals heavy in corn, also containing barley, malted barley (30% max), rye and wheat.

Blended: a whiskey made from the blending of several whiskeys from one or more Irish distilleries. It may contain whiskeys from several vintages, composed of several cereals (single malt or pure pot still whiskey) mixed with grain whiskey. Irish blended whiskeys carry a brand name that need not correspond to any particular distillery, as they are by essence a blend. Most blends have no age statement. When a blend displays an age, each malt and grain whiskey in it must be at least that old.
