Maraschino is a liqueur made from Marasca cherries. The Marasca is a variety of cherry produced in Mediterranean regions. The name "Maraschino" naturally comes from the fruit used to produce this liqueur. Maraschino is also written marrasquino or maraskino in some languages.

Dominican apothecaries from the monastery in the city of Zara (now Zadar) in Croatia were the first producers of Maraschino. It should be noted that historically, the city of Zadar was located in a former Italian region. It used to be called Zara and was renamed Zadar. The first production of Maraschino dates back to the 16th century. The first distillery to officially produce Maraschino was founded in 1759. At that time, the beverage now known as Maraschino was previously called "Rosolj," which literally meant "dew of the sun."

Historically, Maraschino is also linked to Emperor Napoleon Bonaparte, the kings of France Louis XVIII and Charles X, the kings of England George IV and George V, as well as Nicholas I, Emperor of Russia, who all regularly drank this beverage.

Maraschino was once a prestigious alcoholic beverage. It has become more popular over time.

Production of Maraschino

The Marasca cherry harvest takes place between April and June each year. The Trieste region in Italy is known as the heart of Marasca cherry production. Marasca cherry growers are also found in Croatia.

Maraschino is produced mainly in Croatia, in the Zadar regions of Dalmatia, and in Italy in Friuli-Venezia Giulia, more specifically in the municipalities of Padua, Venice and Bologna. Maraschino is also produced in Sardinia. Smaller productions of Maraschino are also made in Greece.

The production of Maraschino requires one or two steps that may vary depending on the recipes of the distilleries:

Maceration of the Marasca cherry: the flesh and the pit of the Marasca cherry are macerated in eau-de-vie for several weeks in agricultural alcohol.

Distillation of the Marasca cherry or macerated Marasca: the Marasca cherry or the macerated mixture is distilled to produce Marasca cherry eau-de-vie.

Addition of sugar: a liqueur is a flavored spirit that contains at least 100 grams of sugar per liter. This sugar content is what legally defines a liqueur under European legislation. Maraschino is no exception to this rule. The mixture obtained after maceration is therefore supplemented with sugar. Some distilleries also add honey to sweeten the beverage.

Maraschino is then bottled in 70cl or 50cl bottles. Maraschino bottles are traditionally wrapped in a straw casing. The label on the Maraschino bottle can be placed under or on this casing. Some Maraschino bottles are sometimes signed by their producer, who affixes a stamp, as in the case of the Maraschino Luxardo bottle.

Maraschino can be aged for several months in vats before being bottled.

There are many brands that produce Maraschino, such as Bols, Briottet, Cartron, Combier, De Kuyper, Gabriel Boudier, Giffard, Luxardo and Maraska.

The Luxardo brand is the most iconic Maraschino brand on the market. It was founded in 1821 by Girolamo Luxardo, who was at the time consul of the Kingdom of Sardinia. The Luxardo Maraschino distillery was the largest in the Dalmatia region before being destroyed during World War II. It was the descendant of Girolamo Luxardo, named Giorgio Luxardo, who rebuilt the new Luxardo distillery in Torreglia, Italy.

Today, there is still some artisanal Maraschino production. However, artisanal Maraschino is rarely sold outside Croatia and Italy. Only industrial Maraschino references are exported. That said, industrial Maraschinos are of very high quality.
