Agricultural rum is an eau-de-vie whose distinctive feature is being produced from pure sugarcane juice. Pure sugarcane juice is also called vesou. Agricultural rum differs from industrial rum, which is made from fermented by-products of the sugar industry, or molasses. Purists consider agricultural rum to be the finest thanks to its composition made exclusively of pure sugarcane juice, the noble material of sugarcane. The first productions of agricultural rum date from the 17th century, when French colonists who had developed sugarcane cultivation discovered that cane juice fermented by heat could produce alcohol. Father Labat is said to have produced the first versions. Today agricultural rum is produced in greater quantities than industrial rum.
Agricultural rum is produced mainly in the West Indies and South America. Among the main producers are France with Réunion, Guadeloupe, French Polynesia, French Guiana and Martinique (Martinique is the only territory with an AOC).
