The rum of Martinique
Like all rums, Martinican spirits are produced from sugar cane. Sugar cane plantations are among the main Creole crops of Martinique. The exceptional climate of the West Indies supports sugar cane cultivation. Originally, Martinican rum was called tue-diable, guildive or tafia. The first Martinican rums were produced in the 17th century.
Martinican rum is mainly renowned for its agricole production, known locally as rhum z'habitant. Agricole rum is a cane spirit produced by fermentation and distillation of fresh sugar cane juice (vesou).
In Martinique, agricole rum emerged from the isolation of cane growers supplying the sugar mills. Out of necessity, the cane juice had to be distilled and fermented directly at the growers' premises. However, Martinican rum is the only rum to enjoy the AOC (Appellation d'Origine Contrôlée) label, obtained in 1996.
Adding "agricole" to the PGI means the rum is made exclusively from cane juice. Adding "de sucrerie" means the rum is made only from molasses.
