Lambig Lambig (which can also be spelt Lambik or lambiek) is made from cider, often farmhouse cider. The cider is distilled in a still to obtain a spirit with a high alcohol content and a more concentrated flavour than cider. A still is an apparatus used to separate substances by heating and then cooling. It is in fact the word "alambic" — the tool used to make lambig — that gave rise to the name "lambig." In Breton, the word for still is "al lambig." To obtain 1 litre of lambig, you need to distil 11 litres of cider. On average, lambig is between 40° and 50° proof. When the cider is distilled, the resulting distillate comes out at around 70°. This alcohol level is then reduced by adding water. Lambig is a spirit that, most of the time, contains nothing but distilled cider. It can therefore legitimately be considered an apple-based eau-de-vie. Some versions of lambig, depending on the brand, may be enriched with spices or other agricultural products. It is worth noting that lambig is the base of another Breton spirit, pommeau. Lambig should not be confused with Lambic, which is a Belgian beer. Once produced, lambig may be aged in oak barrels for several years. Ageing in oak barrels notably gives the liquid its amber colour: the alcohol extracts the essences of the wood, which colours the spirit. Oak wood also imparts distinctive flavour characteristics. Oak-aged lambig offers vegetal and floral notes. Lambig delivers smooth, woody and fruity notes. Drinking lambig Lambig is a spirit that holds an Appellation d'Origine Contrôlée (AOC), like calvados. The "Fine-Bretagne" lambig label certifies a bottle produced in Brittany and aged in oak barrels for at least 4 years. To obtain the AOC, lambig must be made in Brittany — that is, in the départements of Finistère, Côtes-d'Armor, Morbihan, Ille-et-Vilaine or Loire-Atlantique. The term "vieille réserve" lambig refers to a lambig aged in oak barrels for at least 3 years, while "hors d'âge" lambig refers to one aged for at least 6 years. There is, however, no legislation officially regulating the "hors d'âge" designation. Lambig is a spirit that can be enjoyed as an aperitif or a digestif. It can be served chilled or at room temperature. Lambig is served in a tulip-shaped glass, much like whisky. This type of glass concentrates the aromas, allowing you to better inhale the lambig and appreciate its olfactory bouquet. When served as an aperitif, lambig may also be paired with a fruit liqueur. In some fine-dining restaurants, lambig is used as a base for cocktails. As an apple eau-de-vie, lambig brings a genuinely fruity touch to cocktails.
