Cava is increasingly popular with consumers. Today, we mostly find Cava brut, Cava seco and Cava semi-seco on the market. There is almost no industrial production of Cava dulce left. Cava has retained its original production method over time. The "traditional method" is the process also used to produce Champagne and other sparkling wines in France, Espumante in Portugal, and Franciacorta in Italy. The traditional method follows 4 main stages:
· Preparation of the base wine
· Bottling the wine for a first fermentation
· Application of a second fermentation
· Removal of the deposits from the second fermentation
These stages are concluded by the final corking and labelling of the Cava bottle.
Cava is an alcoholic drink containing around 12% alcohol. Cava is sold in 75 cl bottles with a cork and a wire muselet. Cava is the most consumed sparkling wine in Spain. Around the world, Cava consumption has also grown over time. Since 2010, Cava has been the most commercialised sparkling wine in the world, ahead of Champagne and Prosecco. Cava is a financially attractive sparkling wine. You can treat yourself to the finest Cavas at affordable prices. The price of Cava is much lower than that of Champagne, for example.
The most famous Cava brand is Freixenet. It is the world's leading Cava producer. The name Freixenet comes from La Freixeneda, the name of the land where the Cava is produced.
